Chicken and Veggie Lunch or Supper...


In a 9x13 pan, cut 4 large boneless chicken breast in half, add one package frozen whole, fine, green beans on one side, and cut up red skinned potatoes on either side of the chicken. I also added one Very large zucchini. Sprinkle a packet of zesty Italian dressing mix on top. Drizzle 1 stick of melted butter all over it. Cover with heavy aluminum foil and bake at 350 for 1- 1/2 hours. When done... take the foil off, return to oven to brown a bit. This is what I did simply because I like things a bit crisper. If you want to eat it as is...go for it.



I should have made some iced tea but didn't think of it until we had already sat down.  Hubby drinks water and I had made coffee...

It turned out Great and almost TOO easy! As you can see...it was Very good! I added a little butter and a dolop of sour cream to it. Perfect! Hope you try it! It makes enough for two and a half meals. The half meal is mine for Monday...Hubby goes to Rotary at lunch so I'm on my own.

I didn't make the blackberry pie.  There's a dessert trailer  that comes to town several times a month called The Vanilla Bean.  They sell all sorts of goodies.  I happen to like blackberry pie and Sea salt  chocolate chip cookies.  The cookies are huge!  Almost as big as a sandwich plate!








And naturally, you can't forget the little beggars! Do we spoil our pets? You bet we do...Do we feed them "real" food? You bet we do...Chicken, rice, beef, carrots, potatoes, pork...you name it, they eat it. We've had several loved pets that are now gone but I never had one live less than 16yrs (stroke). The oldest lived to be almost nineteen. Dry dog or cat food is awful. Not much nutrition in it. I'll take a photo of how I mix up a batch of their beef & rice sometime. It's a bit of a chore but then again...when you have "family, you have to cook!"

I'd be tempted to fix that but Mr. Jim has taken a sudden dislike to chicken. His taste buds are all out of wack. He doesn't even like coffee anymore! Meal times are not fun times, that's for sure, LOL.

Well you have inspired me to make that dish, Donna dear. That looks incredibly delicious and as you said, so easy! Now, I don't know where to get sandwich-plate sized sea-salt-studded chocolate chip cookies, so that is a problem. No Vanilla Bean trailer here! Boo Hoo! xoxo

The chicken and veggies look so good! But that dessert trailer would be my undoing! :-) We just started trying to eat more healthily. Not to say anything is completely verboten, but kind've. :-)
