You Need To Go Watch This....


Nothing much different for today. I DO feel better though. Thanks for all the sweet remarks!! The kiddos went to the opening game...Will gets up to bat...Knocks it To The Fence Line!!!LOL...and ran to 2nd base....He was So excited. Loving my sweetie Baby!!

Oh my Word! Talk about luscious! On Thanksgiving and Christmas I always make Pumpkin pies. The kids, I've started noticing, rarely go back for seconds. I know they have other places to go (other grandparents, etc.). Buttt...even Larry and I are getting tired of the same old thing... I found this recipe several months ago and totally forgot about it! Going through my old recipe keeper, this one fell out onto my lap, begging me to make it! lol So I did, yesterday evening. It needed to set up overnight in the refrigerator so after it had cooled for several hours, I popped it in and let it get cold. This morning...After breakfast...lol...I cut into it for the above final photo. Larry was gracious...lol...and said he'd help me out by eating it! I had a forkful and must say, it's Wonderful!! So, Thanksgiving and Christmas menus, look out! There's a new Pumpkin in town!

Ingredients

  • 1 Box White Cake Mix (or yellow, your choice)
  • 1 can pumpkin puree (15ozcan)
  • 1 12oz can evaporated milk
  • 3 large eggs. beaten
  • 1 1/2 cups white sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups chopped pecans
  • 1 cup melted butter (microwave or stovetop)

Instructions

  1. Preheat Oven to 350 F
  2. Grease a 9x13 pan or dish
  3. Mix pumpkin, milk, eggs, sugar, cinnamon and salt together in a separate bowl.
  4. Pour into 9x13 dish
  5. Sprinkle all of the cake mix gently over the wet ingredients
  6. Sprinkle all the pecans over the dry cake mix
  7. Drizzle the butter over the pecans
  8. Do Not Stir!
  9. Place in oven and bake for 60 minutes.
  10. Do Not over bake!
  11. Let cool then place in the refrigerator for at least 3 hours of overnight.
  12. You can make this several days ahead of event, just keep covered with plastic wrap.
