Meeting at the Bookstore

An old friend of mine is going to meet me at the bookstore. Ellanni and I have known each other for over 40 years...Gawd..did I just say 40 yrs? We met in high school but didn't really become fast friends until the early 80's. She's kind, warm and very unpretentious. When she laughs you know it's real. Got a friend like that? Better hang on to 'em. Now let's see..coffee, what ever should I get? Let us just say its gonna have some "mocha" thing going on! I don't care if I never get to sleep. Worth it. So until tomorrow, have a great evening.

Can't think of a better place to meet with an old friend than a bookstore! 40 years went fast didn't it? I graduated HS 47 years ago! Yep, I'm an oldie but goodie. :)

Preheat Oven to 350 F
Grease a 9x13 pan or dish
Mix pumpkin, milk, eggs, sugar, cinnamon and salt together in a separate bowl.
Pour into 9x13 dish
Sprinkle all of the cake mix gently over the wet ingredients
Sprinkle all the pecans over the dry cake mix
Drizzle the butter over the pecans
Do Not Stir!
Place in oven and bake for 60 minutes.
Do Not over bake!
Let cool then place in the refrigerator for at least 3 hours of overnight.
You can make this several days ahead of event, just keep covered with plastic wrap.
Enjoy!
